Yummy Apple Fritters Recipe

A Delicious apple fritter recipe, That is covered with a sweet glaze.
4 medium apples, peeled and cored
1/2 cup granulated sugar
1 Tablespoon lemon juice
2 Tablespoon ground cinnamon
1 cup hot warm water
1/2 cup plus 1 Tablespoon granulated sugar
3 Tablespoons active dry yeast
1/2 teaspoon baking powder
1/4 teaspoon ground allspice
1 1/2 teaspoon sea salt
4 cups all purpose flour, sifted
1/4 cup butter, cubed
2 large eggs
1/2 teaspoon vanilla extract
vegetable oil for frying
2 cups confectioners sugar
1 Tablespoon cinnamon
1 Tablespoon corn syrup
1/2 teaspoon sea salt
1 teaspoon vanilla extract
1 Tablespoons granulated sugar
1/3 cup water
To make the filling, cut the apples into 1/2 inch cubes.
Place them in a saucepan with 1/2 cup sugar and lemon juice.
Cook over medium heat until apples are soft, about 5 minutes.
Remove from heat and set aside to cool.
To make the dough. Pour 1 cup of boiling water into the bowl electric mixer fitted with a dough hook.
Stir 1 Tablespoon sugar into the water.
In a large bowl, combine 1/2 cup sugar, baking powder, all spice, salt and flour.
In a small bowl, combine vanilla extract, butter and eggs.
Add apple mixture to the wet ingredients.
Spoon in the yeast into the mixer bowl of water, gently stir then let sit for 5 minutes.
Turn mixer on to low speed and add the egg mixture.
Add the dry ingredients, a cup at a time until combined.
Wrap the dough in plastic wrap and chill for 1-2 hours.
On a well floured surface, roll the dough out to a 1/2inch thick rectangle.
Using a sharp knife, slice the dough into 1-inch pieces in a checkerboard pattern.
Shape 4 ounce portions of the dough into round mounds and allow to rest for 10 minutes.
Slice again into 1" slices
Arrange on two floured cookie sheets about 2 inches apart.
Put the fritters in a warm spot to rise for 45 minutes.
To make the glaze. Combine confectioners sugar, cinnamon, corn syrup, salt and vanilla extract in your mixer bowl.
In a small saucepan, heat 1 Tablespoon sugar, and 1/3 cup water on medium heat.
Bring it to a boil and simmer for 1-2 minutes, whisking occasionally.
Pour the sugar syrup into the powdered sugar and blend until smooth.
Fill a large pot to 2inch deep with oil, turn the heat on to medium, stick in a thermometer and wait for the oil to heat up to 340° F.
Carefully transfer the fritters into the oil one at a time. Cook for about 2 minutes per side.
Glaze the fritters while they are still warm by dipping them puffy side down in the warm glaze.
Flip them back over and let cool completely on a wire rack.
