Young Potato Salad Recipe

You will enjoy this salad made with young potatoes

Ingredients

500 g baby potatoes
Finely chopped green salad onions ( 1 or 2)
Finely chopped sprig of parsley
1 cup of good mayonaise
juice and zest of 1 lemon
3 tablespoons extra virgin olive oil
2 tablepoon mustard
2 tablespoons honey
Salt and pepper to taste

* Optional - Bacon bits -

Directions

Boil 20 small potatoes until tender and cut in half - Leave them to cool -

Add 1 bunch of finely chopped chopped parsley

Mix mayo, juice and zest of 1 lemon, extra virgin olive oil, mustard and honey.

Combine well with the potatoes and salad onions & parsley. Dont overstir them. You want to keep the potatoes firm.

Season with salt and pepper.

Gently stir in the bacon bits using.
