Tomato Soup Recipe

This is an easy tomato soup recipe that is best with fresh warm bread to dip.

Ingredients

2 lbs plum tomatoes
6 garlic cloves
1/4 medium red onion
1 Tablespoon olive oil
1 Tablespoon balsamic vinegar
2 Tablespoons fresh oregano
3 -4 basil leaves
2 cups water
salt
pepper

Serves 6 - 8

Directions

Pre-heat oven to 375 degrees F.

Wash and cut tomatoes, placing in a shallow baking dish cut side down.

In a large pot put in tomatoes (cut up), garlic (minced), red onion (cut up), olive oil, balsamic vinegar, oregano, basil, water, salt and pepper (to taste, about 1 teaspoon each). Bring to a boil on medium - high heat, and reduce heat to let simmer for about 45 minutes.

Once done set to cool. Place soup in a blender or food processor, and puree till smooth. Place soup back in pot and re-heat and serve.

Garnish with fresh basil.
