Cranraisin Banana Muffins Recipe

A tasty nutritious Cranraisin Banana Muffin recipe. Great to prepare and serve warm with a morning cup of coffee during the holiday season.

Ingredients

2 ripe bananas, mashed
1 egg
1/4 cup oil
1/4 cup milk
1/2 cup granulated sugar
2 Tablespoons maple syrup or honey
1 cupall purpose flour
1 3/4 cup quick cooking oats
3 teaspoons baking powder
1/4 teaspoon salt
1/2 cup dried cranraisins
Makes 12 muffins

Directions

Preheat oven to 350˚F.

Line a 12 hole muffin tin with paper liners.

In a large mixing bowl using an electric beater, mix together bananas, milk, oil, maple syrup or honey, granulated sugar and egg in a bowl.

In a separate bowl, combine dry ingredients: flour, quick oats, baking powder, and salt.

Stir dry into wet until just combined. Fold in the cranraisins.

Spoon evenly into muffin tins.

Bake for 20-25 minutes or until done.

Let cool on racks. Delicious warm.
