Crab Cake Recipe

This crab cake recipe also has a little bit of fresh zucchini so its even more nutrious and delicious!

Ingredients

1 cup grated fresh zucchini (1 small zucchini)
2 cups fresh or canned crabmeat
2 1/2 cups bread crumbs
1 egg
2/3 cup mayonnaise
1/3 cup chopped white onion
1/2 tablespoons seafood seasoning
1 tablespoon fresh dill
2 teaspoons lemon juice
1/4 teaspoon black pepper

(Makes 8 patties)

Directions

Prepare a baking sheet. Line with parchment paper and brush with olive oil.

Set the oven to broil.

Grate the zucchini with a fine grater. Use paper towels to dab out the moisture.

In a large bowl, combine all ingredients and mix together well.

Shape into 8 patties.

Broil for 5 minutes each side or until golden brown.

OR you can cook in a frying pan.

Put a tablespoon of olive oil onto a large frying pan and heat the oil over medium heat. When hot put the crabcakes onto the pan. Cook for 5 minutes on one side, flip and cook the other side until golden brown.

Garnish with fresh dill if desired.
