Mini White Cakes Recipe
A pretty mini white cakes recipe. with whipped topping and fresh grapes.
2 eggs, separated
1 2/3 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
1/2 cup milk
1 cup granulated sugar
2 teaspoons vanilla extract
1 cup heavy cream
3 Teaspoons granulted sugar
1 teaspoon vanilla extract
Preheat oven to 350 degrees F. Grease 6 individual size baking tins and coat with a light dusting of flour.
In a large bowl sift the flour, baking powder and salt.
Separate the eggs placing the whites in one bowl and the yolks in another.
Using an electric stand mixer on medium speed, whisk the eggs, pour in the sugar. Whisk until stiff peaks form.
With the mixer on, in a slow steady pour the butter and milk into the egg yolk mixture and beat to combine.
Add the vanilla extract mixing just until combined.
Fold in the flour mixture to the egg mixture.
Divide the batter evenly among the prepared baking tins.
Bake 15-20 minutes or until toothpick inserted in the center comes out clean.
Transfer to a wire rack to cool in tins for 2 to 3 minutes. Remove cakes from tins and return to wire rack to cool completely.
Whip the cream, vanilla and sugar until stiff peaks for, spread whipped cream over cakes to serve. and top each with a cold grape.
