Fresh Plum Cake Recipe
This fresh plum cake recipe is quick to make and offers a very tasty dessert. It's extra yummy when still slightly warm and extra extra yummy when you serve it with some fresh whipped cream.
1 1/2 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 teaspoon grated lemon zest
1/2 cup (1 stick) butter, at room temperature
2/3 cups granulated sugar
2 large eggs, at room temperature
3/4 cups sour cream, at room temperature
1 teaspoon pure vanilla extract
12 small to medium, ripe plums, halved lengthwise and pitted
Preheat oven to 350F.
Grease and flour a 9 inch round cake pan with butter.
Whisk together flour, baking powder, salt, baking soda and lemon zest.
Beat together butter and sugar until light and fluffy. Add eggs one at a time beat after each addition. Add in sour cream and vanilla, and mix until well incorporated. Mix in dry ingredients until its combined. Fold in plums.
Pour batter into prepared cake pan and bake for 50 - 55 minutes, or until an inserted toothpick comes out clean. Set to cool, once cool enough to touch turn cake out of pan and let cool completely on a wire rack.
Garnish with some dusted confectioner's sugar and some whipped cream.
